Florence’s Pecan Fingers Cookie Recipe

Let me begin by saying I have no idea who Florence is.

This was another Christmas cookie tradition, along with the Merry Christmas Butter Cookies, Mom would also make pecan fingers.

Mom didn’t have much of a sweet tooth, and these cookies aren’t as sweet as other Christmas cookies, so they might be a good alternative for the people in your life who like less sweet desserts.

However, don’t let the lack of sweetness fool you, they’re still pretty addicting.

As you can see in the below picture, Mom hand-wrote this recipe from somewhere, who knows where. And clearly, someone should have asked her who Florence was before she died. But, hey, whoever Florence is, we owe her a debt of gratitude for this unique and tasty Christmas cookie.

Florence’s Pecan Fingers

1 cup butter

¼ cup firmly packed light brown sugar

2 cups sifted all purpose flour

½ teaspoon salt

1 tablespoon water

1 teaspoon vanilla

2 cups finally chopped pecans

Powdered sugar

 

1. Cream butter. Add sugar gradually. Cream well.

2. Add flour, salt, water and vanilla.

3. Add pecans. Blend.

4. Shape dough into date-like pieces.

5. Place on greased cookie sheet.

6. Bake at 350 for 18-20 minutes. Roll in powdered sugar.

7. Makes about 2 ½ dozen.
